MOM'S RECIPES
Learning how to make my childhood favorites, mostly simple Indian home cooking

~ Aloo gobi ~

  • cut potatoes and cauliflower - medium small pieces
  • boil/steam veggies till semi soft
  • heat + ghee + hing (asafoetida) + garlic ginger paste + chopped onions + fry
  • add veggies + cook with lid for ~ 5 mins
  • chopped tomatoes + cook with lid for ~ 5 mins
  • add spices, from least to most: turmeric cumin coriander
  • to taste: chili salt



~ Patta gobi ~

  • chop cabbage finely
  • heat + ghee + lots of mustard seed + curry leaf
  • add cabbage and cook for ~ 5 mins
    • till water starts coming out
  • add tomatoes + peas, cook for ~ 5 mins
  • salt chili turmeric tiny bit of coriander
  • chopped chilies



~ Mattar paneer ~
This one is Shipra's, she's a mom too

  • Cut up 200g of paneer into small cubes
  • in a wok / pot: 1 tbsp ghee, let it get hot, then:
    • 1 bay leaf
    • small cinnamon stick (or ¼ tsp cinnamon powder)
    • 1/2 tsp fennel seeds
    • 1 tsp jeera (cumin seeds)
    • 1/4 tsp mustard seed (or mustard seed powder)
  • When this starts popping, add
    • 1 onion, blended into a paste
  • let this cook low and slow until it gets pink, stirring regularly
    • When the onions get pink (~5-6 minutes of cooking), add
    • 1 tbsp of grated ginger and garlic
  • When the mixture gets brown (4-5 more mins), add
    • 1/2 can tomato puree and more spices:
    • 1/2 tsp turmeric
    • 1/2 - 1 tsp chili powder
    • 1 tsp coriander powder
    • 1+ tsp salt
  • Let it cook for ~7 more mins, keep stirring
    • Add water if it gets too dry
  • When it starts looking oily again
    • Add peas
    • Add 1 can coconut milk
    • Add paneer
  • Cook for a bit longer
  • Serve with rice or naan
